Taco Melts!! At the encouragement of a friend I tried this recipe for our small group meeting yesterday. There were just a few left and the kiddos LOVED them. So I thought I'd share another recipe since I'm in a sharing mood (I think it has something to do with the open windows :)
INGREDIENTS :
1 package (1 oz) Old El Paso® taco seasoning mix
2/3 cup water
1 1/2 cups Old El Paso® Thick 'n Chunky salsa
1 lb lean (at least 80%) ground beef, cooked, drained
1 can (16.3 oz) Pillsbury® Grands!® refrigerated biscuits (any variety)
1 cup shredded Monterey Jack cheese or Mexican cheese blend (4 oz)
1 cup sour cream, if desired
DIRECTIONS:
1. Heat oven to 375°F.
2. In medium saucepan, cook taco seasoning mix, water, 1/2 cup of the salsa and cooked ground beef until thickened.
3. Press each biscuit into 6-inch round. Fill each with taco mixture and 1 tablespoon cheese. Fold dough over filling and press to seal. Place on greased cookie sheet.
4. Bake 9 to 14 minutes or until golden brown. Serve with remaining salsa, cheese and sour cream.

I love how cute these pails turned out. I am a member of a one man committee that welcomes new babies into our church. (I'm not complaining about the one man part. I love doing things like this, it's my happy place :) I found a great deal on these galvanized metal pails and added polka dots and furry trim.
Then I found a bigger metal tub that I thought would be perfect for a baby basket that C's class is putting together for an auction at their school.

I'm even more bummed now that we missed small group. I am so glad to be HOME and back in the land of "what we do." I just may make those taco melts for dinner; they look so yummy, and right now, for me, that is a victory in itself! =)
The buckets are TOO cute -- you rock.

The weather has been horrendous around here as well. Cold and lots of rain. Makes boating quite difficult.
